Castillo`s Secret Sauce | Video

A Bismarck cook has developed a tasty marinara sauce that is tempting the taste buds of Sam`s Club.

The special blend of herbs and spices in this new specialty food is a secret that is guarded more closely than the recipe for Colonel Sander`s famous fried chicken.

Only a few people know the combination of ingredients that go into Castillo`s Marinara sauce. Jim Castillo and his son David make sure the mystery surrounding their recipe stays that way, by hand cutting and combining all the herbs and spices that go into the sauce.

"I have over the years tried different combinations, different garlic, different tomatoes even different basils," says Jim.

After 20-years of tinkering with the ingredients, the Castillo`s were satisfied the recipe was perfect, but it took another six taste tests to convince Sam`s Club to bite on stocking the sauce in their stores.

"It has a very strong oregano-basil flavor, it`s not overpowering, but strong, it`s great on pizza, fabulous on spaghetti and as a marinara sauce," says David.

In addition to cutting up and mixing all the spices and ingredients, the Castillo`s go the extra mile to make sure their recipe stays a secret. They personally drive the mystery mixture 250 miles to the processing plant that bottles the homemade sauce.

Here it is bottled and sealed hot, which increases the sauce`s shelf life to two years and preserves the homemade taste.

"It smells really good, but I don`t know what is in it," says Amber Landa, the production manager for Full Service Foods in Hillsboro.

She says if Castillo`s marinara sauce becomes a big seller, her staff of 10 can meet any national or regional production demands. Sams Club customers will soon decide if the secret recipe in this sauce is tasty enough to keep these employees, and the Castillo`s working overtime.

Castillo`s marinara sauce will be stocked on the Bismarck Sams Club shelves beginning in November, and if it sells well, it will be carried by all the Sams Club stores in North Dakota. If it becomes popular statewide, it will be sold nationally by the retail chain. The sauce will also be available in local grocery stores in December.
